What is the purpose of the rockets to lines of white smoke across the sky?

I often see rockets do white lines across the sky of the tail of smoke. I wonder what is the purpose behind it.

Are you sure those are really the rockets? No many who started, you know, and tends to rise very quickly so unless you are down range from a rocket launching platform, probably never seen a rocket. I tend to have the feeling that what he is talking contrails can be high-altitude aircraft.
